Jujey's Chicken Nuggets
>> Sunday, April 11, 2010
So i made a vow never to buy chicken nuggets from the grocery store again for my kids. I have heard so many horror stories of what is actually in them, which disgusts me.....so I thought, hey, i can make them instead, and at least i know what is going in my kids mouth. By the way, they are DELICIOUS!!!
JUJEY'S CHICKEN NUGGETS
3 skinless, boneless chicken breasts cut into cubes
1 cup plain bread crumbs1/2 cup grated Parmesan cheese
1 teaspoon salt (or more to ur liking)
1/4 teaspoon oregano
1 teaspoon garlic powder
pepper
1 cup buttermilk
- Preheat oven to 400 degrees F (200 degrees C).
- Cut chicken breasts into 1 1/2 inch size pieces. Sprinkle chicken with 1/2 tsp salt, oregano, pepper, and 1/2 tsp garlic powder. Mix well, and then pour buttermilk over chicken and let sit for 20 min. If you do not have buttermilk, use 1 tsp of vinegar and mix with 1 cup of milk.
- In a medium bowl, mix together the bread crumbs, cheese, remaining salt, garlic and pepper. Mix well.
- Take chicken pieces from buttermilk first, then coat with the breadcrumb mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes. Turn over chicken half way through.
