Raquel's Mexican Tostadas

These are soooooooo easy to make and yummy.


RAQUEL'S MEXICAN TOSTADAS

1 large onion, chopped
2 cloves of garlic, minced
1 pound of ground beef
1 package of taco seasoning (or make your own using, oregano, paprika, chili powder, cumin, salt and pepper)
1 package of corn tortillas
2 cans of refried beans
cheddar or mozarella cheese, grated
oil for fying

Garnish
lettuce
tomatoes
green onions
coriander
sour cream
olives

  • Deep fry tortillas in oil until they're hard and crispy. Set aside. Saute onions, and garlic until well cooked add the meat and taco seasoning simmer on low for about 15 minutes until the meat is througly cooked. Heat up the beans in a pan. 
  • Assembley: spread about 2 tablespoons of beans on tortilla, cover with ground beef and cheese. Place in the oven for about 5 minutes, just until the cheese melts. Garnish with lettuce, tomatoes, green onions, coriander, sour cream and olives.
