Nerrt's Apple Harvest Pound Cake with Carmel Glaze

YUM this looks great!




NERRT'S APPLE HARVEST POUND CAKE WITH CARAMEL GLAZE

2 cups white sugar (or 1 cup white and 1 cup brown)
1 ½ cups vegetable oil
2 tsp vanilla
3 eggs
3 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 med. Apples chopped
1 cup walnuts (I didn't use)
½ cup butter
2 tsp milk
½ cup brown sugar

  • Preheat oven to 350 F (175 C). Grease a 9 inch Bundt pan.
  • Beat sugar, oil, vanilla and eggs with a mixer until light and fluffy. In a separate bowl, combine the flour, baking soda, cinnamon and salt. Stir dry ingredients into batter, just until blended. Fold in apples and walnuts. Pour into pan. Bake for approx. 70 min. Cool for 20 min, then invert.
  • Glaze: Heat butter, milk and sugar over medium heat. Boil or heat just until sugar has dissolved. Drizzle over warm cake.
TIP: Place a sheet or use a large plate to invert cake on to catch all the excess caramel glaze. Also, if you don't like walnuts in the cake, you can always chop them and use them on top of the cake.
