Hana's Freekeh With Chicken!

HANA'S FREEKEH WITH CHICKEN

1 kg chicken
1 onion roughly chopped
1 bay leaf
1 clove
3 cardamom pods
2 cups freekeh
2 tsp salt
1 tsp ground cinnamon
1 tsp behar
1/4 tsp ground black pepper
1/4 cup pinenuts
  • Pick over, rinse & soak freekeh in cold water for 30-60 minutes.
  • Wash & cut chicken into 4 pieces.
  • Sauté onion in a tbsp of oil until golden. Add the chicken & brown on each side for approx 3 mins/side.
  •  Add 6 cups water, bay leaf, cardamom & cloves and bring to a boil.
  • Reduce heat, cover & let simmer for 20 minutes. Remove chicken & strain broth.
  • Sauté the pinenuts in a tbsp of oil then remove. Sauté the drained freekeh & add 2.5 cups of the drained chicken broth. Add the salt, behar, cinnamon & black pepper. Bring to a boil then cover and let simmer on low heat for 30 minutes.
  • Plate the freekeh with the chicken on top garnished with the pinenuts.
  • Serve with plain yogurt on the side.

Cosmic Cook I have no idea how to explain what Freekeh is...so I just googled it, and found this:
Freekeh (sometimes spelled frikeh) or farik (Arabic: فريكة‎) is a cereal food made from green wheat that goes through a roasting process in its production.
So basically...it's a Green Wheat! If u are in North America, just go to any middle eastern grocery store, and u will be able to find it there.
