1 kg chicken
1 onion roughly chopped
1 bay leaf
3 cardamom pods
2 cups freekeh
2 tsp salt
1 tsp ground cinnamon
1 tsp behar
1/4 tsp ground black pepper
1/4 cup pinenuts
Pick over, rinse & soak freekeh in cold water for 30-60 minutes.
Wash & cut chicken into 4 pieces.
Sauté onion in a tbsp of oil until golden. Add the chicken & brown on each side for approx 3 mins/side.
Add 6 cups water, bay leaf, cardamom & cloves and bring to a boil.
Reduce heat, cover & let simmer for 20 minutes. Remove chicken & strain broth.
Sauté the pinenuts in a tbsp of oil then remove. Sauté the drained freekeh & add 2.5 cups of the drained chicken broth. Add the salt, behar, cinnamon & black pepper. Bring to a boil then cover and let simmer on low heat for 30 minutes.
Plate the freekeh with the chicken on top garnished with the pinenuts.
