This a simple and delicious recipe that requires little preparation and time. It was sent to me by a friend of mine who knew I didn't like shrimp but I love this dish so much, that I make it all the time.
This looks soooooooo good!!!
DIMA'S GREEK SHRIMP
4 tomatoes (diced)
1 1/2 pound of shrimps
6tbs olive oil
1/4cup of onion (diced)
1/2cup water + 2tbs vinegar + 2 tsp sugar
1/2 tsp Oregano
1 tsp salt and pepper
1 cup Feta cheese (cut it into 1/4 cubes")
- In a dutch oven, add olive oil and sautee onions, tomatoes until they become soft. Add the mixture of water, vinegar and sugar and let it come to a boil. Add salt, pepper and oregano and let it simmer for 2-3 minutes.
- Add the parsley and shrimp and cook for 5-6 minutes. Remove from heat and add the feta cheese.
- Mix it slowly until the cheese partially melts.
- Serve with French bread and butter
