DELICIOUS!!!!!


NERRT'S APPLE CAKE

3 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon (I added way more)
1/4 tsp gound allspice
1 cup granulated sugar
1 cup packed brown sugar
1 cup cooking oil
2 beaten eggs
1 tbsp vanilla
3 cups chopped, peeled apples
1 cup chopped peacans, toasted (I omitted and used some cinnamon chips)
2 tsps finely shredded lemon peel (I added lemon juice to apples instead)
sifted powdered sugar (I omitted)


  • Grease and lightly flour a 10 inch tube pan (I used a regular 10 inch round). Stir together flour, baking powder, baking soda, cinnamon, allspice, and 1/4 tsp salt. Set aside.
  • In a mixing bowl combine granulated sugar, brown sugar, oil, eggs, and vanilla. Beag with an electric mixer on medium speed for 2 minutes. Add dry mixture and beat on low speed just till combined. F(I added a bit of milk because the mixture was REALLY thick). Fold in apples, pecans, and lemon peel. Pour batter into the prepared pan.
  • Bake in 350 C oven about 1 hour or till a wooden toothpick comes out clean. Cool cake on wire rack for 10 minutes. Remove from pan. Cool thoroughly on wire rack. Sprinkle with powdered sugar. Cover and store in refrigerator. Makes 12 servings.

Note: Instead of powdered sugar, in a saucepan, I melted 1-2 Tbsp butter, with the cinnamon chips and drizzled it over the cake after it had cooled.
