I hope this recipe gets you in time to try it this Ramadan. It's a fool proof recipe for the atayef especially useful for those not living in the middle east.
The yield is a dozen large atayef or 3 dozen minis.
In a blender mix:
1 tsp yeast
1 tsp sugar
1/4 cup warm water
And let sit for 5 minutes.
1 cup flour
1/4 cup semolina
1 tsp baking powder
1 1/4 cups warm water
- Let the mixture rest for 5 minutes while you head a nonstick skillet on medium heat. Do not grease the skillet & it must be nonstick.
- Use a 1/4 cup measuring cup to make the large atayef and a tablespoon for the minis. Btw, the first 3 never work out for some reason.
- Stuff with your favorite stuffing and serve with honey or simple syrup.
