Hana's Maamoul

3 cups semolina
1 cup flour
1 cup butter at room temperature
1/4 tsp salt

Mix the ingredients then cover and let rest for 6 hours.

Then add:
2 tbsp powdered milk
1 tsp ground mihleb
1/4 tsp ground mistaka

In the meantime mix:
1 cup lukewarm water
1/2 tsp yeast
1/2 tsp sugar

Knead the semolina mixture with the water yeast mixture.

During the 6 hours of resting prepare your fillings.

Date filling:
250 grams pitted dates
2 tbsp butter
1/2 tsp cinnamon

Pistachio filling:
1.5 cups ground pistachio
3/4 cups icing sugar
1 tbsp flower water "maa il ward"

Preheat oven at 400 degrees Fahrenheit and place one rack on the bottom and one on the top.

Bake for 7 minutes on the bottom then lift to the top for 2 minutes.
