Nerrt's Deep Dark Chocolate Cake

I know, I love making chocolate cakes. Here's another one....kids (and adults) will love the icing.






NERRT'S DEEP DARK CHOCOLATE CAKE

2 cups white sugar 
2 eggs
1 ¾ cups flour 
1 cup milk
¾ cups cocoa powder
½ cup vegetable oil
1 ½ tsp baking soda 
2 tsp vanilla
1 ½ tsp baking soda 
1 cup boiling water
1 tsp salt

  • Heat oven to 350 F. Grease and flour 2 – 9 inch pans or 1 13x9x2 inch pan (I use a 10 inch flan pan). 
  • Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in a bowl (I sift them). Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 min. Stir in boiling water. Pour batter into pans (batter will be thin). 
  • Bake for 30 – 35 minutes in 9 inch round pans, or 35 – 40 minutes for the rectangular pan. Cool for 10 minutes and then cool completely on a wire rack. 
  • Drizzle with melted chocolate, or use Butter Cream Frosting (see below)

Butter Cream Frosting

6 Tbsp butter, softened
2 2/3 cups icing sugar
½ cup cocoa
1/3 cup milk
1 tsp vanilla
  • Beat butter. Add icing sugar and cocoa, alternating with milk. Stir in vanilla.
