Fatima M's Pumpkin Cake

wow I gotta get me some pumpkin!! this looks delish!


4 eggs
1 cup veggie oil
1 (140z) can of pumpkin puree
2 tsp vanilla
2 cups brown sugar
3 cups flour
2 tsp cinnamon
1 tsp baking soda
2 tbsp baking powder


1 pkg cream cheese
1 cup softened butter
dash of vanillaicing sugar (about 3 - 4 cups)
  • Mix all wet ingrediants. mix the dry ingrediants in another bowl and then mix with wet ingrediants. Pour in 2  8" round pans and bake for 35 mins or until toothpick comes out clean.
  • Icing is the cream cheese (room temp) and the butter whipped together, add vanilla and then add icing sugar 1 cup at a time.
**you can bake the cake in a bunt pan and bake for 1 hour. Serve with whip cream or icing.
